Lemon Curd with Strawberries
- 5 egg yolks
- 1/2 cup sugar
- 1/2 cup fresh lemon juice
- 1 tsp. lemon zest
- 1 stick cold, unsalted butter cut into slices
- 2 cups strawberries (stemmed, sliced and sprinkled with sugar)
- Sweetened whipped cream
Put the yolks and sugar in a saucepan and whisk together until smooth over low heat. Add lemon juice and lemon zest. Cook the curd, whisking often, until it starts to thicken about 12-15 minutes. Add butter slices one at a time and whisk until blended. Remove from heat and strain to remove any pieces. Allow to cool and then spoon into dessert glasses and chill until firm. Then top the lemon curd with strawberries and whipped cream. Serves 8.
