Pork twist on guacamole is perfect for Game Day

Game Day is just a few days away, and in preparation for hosting the perfect party, Chef Evan Francois from Harmon’s, shared his “Pork-a-Mole” recipe with us. Think guacamole, but with pork belly and all sorts of other goodness in it. He also shared lots of other Game Day food to showcase.


Serves 10

Prep time: 20 minutes

Cook time: 5 hours



1 pound pork belly

1 tablespoon chinese five spice

½ tablespoon ground ginger

½ tablespoon allspice

½ tablespoon cayenne

1 cup carrots, diced

1 cup celery, diced

1 cup onions, diced

¼ lemon juice

2 quart chicken stock or enough to almost cover ¾ of the pork.

2 pounds Harmons guacamole



Preheat an oven to 250 degrees. Score the fat of the pork belly and season with all of the spices and salt and pepper. Sear the pork belly in a pan fat side down until color is achieved. Remove from the pan and caramelize the vegetables. Place the veggies in a baking pan and add the stock to the pan the veggies were cooking in. Warm the stock until is comes to a boil. Add the pork to the baking pan on top of the veggies and add the stock. Place in the oven and cook for 5 hours. Chop up the meat and mix with 2 pounds of Harmon’s guacamole.
