Fall is in the air, and that means it’s the beginning of baking season. Todd and Sheri from Duerden’s joined Nice DeGering to make one of their favorite cookie recipes. Then, they showed us how the way you use your oven really can improve your baking results.
Quinoa Chocolate Chip Cookies
1/2 cup softened butter (1 cube)
1/2 cup brown sugar
1/4 cup honey
2 tsp. vanilla
3/4 cup all purpose flour
3/4 cup whole wheat flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup cooked quinoa
1 cup oats
1 1/2 cups chocolate chips
Beat together butter, sugar and honey until light and fluffy, then add eggs and vanilla. Combine dry ingredients and slowly add them in until incorporated.
Stir in cooked quinoa, oats and chocolate chips until combined. Preheat oven to 375 convection. Line baking sheets with parchment. Place dough in 1 TBS. balls onto cooking sheets and press down to flatten a bit.
Bake about 8-10 minutes until slightly golden.
