LOGAN (News4Utah) – Move over Willy Wonka. Utah State University now has its own chocolate factory, the first on-campus chocolate production facility in the Western U.S.
There’s no chocolate river or Oompah Loompahs at the new Aggie Chocolate Factory, just students and faculty making high-quality artisan chocolate from bean to bar.
Food Science Professor Silvana Martini is using the factory/laboratory to teach her students the complex process.
“We have beans from Belize,” Professor Martini said. “And we’re going to process the beans all the way from the way that we get them to the final product that is going to be chocolate.”
USU graduate Kaylee West took the class and described it as “awesome”.
“So we got to actually see the cocoa beans, take them apart, see the different processes,” West said. “She did a lot of videos so we watched how different things happen.”
West says she learned a lot in the class despite growing up in a chocolate family. She’s the granddaughter of Mrs. Cavanaugh herself and still works at the Mrs. Cavanaugh’s Chocolate Factory in North Salt Lake.
“I enjoy it,” she told News4Utah. “Everything still is mesmerizing to me.”
Back in Logan, Professor Martini recently gave us a tour of the brand new factory located in Aggie Blue Square just west of Maverik Stadium where you can watch students and professors making chocolate and soon will be able to have a taste.
“There is going to be a little café here on the site,” Professor Martini said. “And the café will feature different hot cocoas that we’re going to top with some cocoa nibs maybe some whipped cream and also we’re going to make some pastries that have our chocolate.”
