LOGAN, Utah (ABC4 News) – The Utah State University Dairy Laboratory resumed production after a major renovation was completed.

The project started in late November at the tune of $900,000 and caused the lab to shut down, that meant no new Aggie Ice Cream and cheese products were churned out.

The university said the remodel took place in part due to new regulations mandated by the FDA’s Food Safety Modernization Act and was funded through a bill passed in the state legislature in 2018.

“It was a necessary thing, and we made some really substantial improvements. It’s really the first time that we’ve shut the dairy products lab down in 40 years,” said Aggie Creamery manager Dave Irish.
