Tailgate the Utah and BYU rivalry game the right way

SALT LAKE CITY, Utah (ABC4 News) Whether you bleed red or blue, one thing we can all agree on is a great tailgate. Chef Jeff from Smiths Grocery joined Good Morning Utah with Brian Carlson for some tasty tailgating ideas.

U of U Crimson Chicken Puffs


2  11 oz tubes croissant dough
1 box Italian bread crumbs
3 c. shredded rotisserie chicken
1/4 c. diced onion
1/2 c. diced celery
1/2 c. dried cranberries
3/4 c. cream cheese at room temp.
1/2 c. sour cream
1/4 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper


1. Preheat oven to 350
2. Open croissant dough and unroll onto a clean surface.
3. Put 2 dough triangles together to make a square and repeat with remaining dough.
3. Place breadcrumbs in a shallow dish.
4. In a bowl stir together the remaining ingredients.
5. Place a heaping tbsp on the center of each croissant square.
6. Fold the dough over the mixture and crimp the edges to make a pouch.
7. Roll each pouch into the breadcrumbs to coat and place on greased baking sheet.
8. Bake 25 to 30 minutes or until golden brown and serve warm.

BYU Blue BBQ Chicken Salad

Salad ingredients

1 lb shredded rotisserie chicken
1/2 c. BBQ sauce
1 lb bag frozen sweet corn thawed
1 10 oz can black beans rinsed and dried
1/4 c. Red onion diced
1 medium tomato diced
1 medium avocado diced
Salt and pepper to taste
1 head butter lettuce washed and leaves separated

Simple Blue Cheese Dressing

1 lb sour cream
1 c. mayo
1/4 c. buttermilk
1 tbsp lemon juice
1/4 c. fresh chopped chives
1 c blue cheese crumbles
Salt and pepper to taste


1. Mix all blue cheese dressing ingredients in a bowl and set aside. Preferably overnight.
2. Place cooled chicken in a bowl and mix with the BBQ sauce. Set aside.
3. In a separate bowl mix together the corn, black beans, red onion, tomato and avocado. Season with salt and pepper to taste. Set aside.
4.  To finish, place butter lettuce leaves on a serving platter and fill each leave starting with 1/4 c. chicken mixture followed by a spoonful of the corn mixture.  Finish with a drizzle of the blue cheese dressing. Serve and enjoy.
