Marvel’s newest movie, Ant-man and the Wasp, hits theaters this weekend! As he struggles to rebalance his home life with his responsibilities as a Super Hero, Scott Lang finds himself suiting up as Ant-man once again when he must join forces with Hope van Dyne, The Wasp, and Dr. Hank Pym on an urgent mission to uncover secrets from the past.
To celebrate the opening of the new movie and Ant-man’s ability to shrink, we’re cooking up miniature honey & lime pork tacos! Krista Numbers, from Simplify Supper, joined Nicea DeGering, to share the recipe.
Honey and Lime Pork Mini Tacos
3 teaspoons ground cumin
3 teaspoons smoked paprika
2 pounds pork tenderloin
1/2 cup honey
1/4 cup lime juice
1/4 cup cilantro, chopped
1/2 cup cabbage, shredded
1 Roma tomato, chopped
1/2 cup salsa
1/2 cup cheddar cheese
Preheat oven to 400 degrees. Using a 3 inch round cookie cutter cut out mini tortillas from a large tortilla. Put in between bottom of muffin cups on a muffin tin by turning muffin tin upside down. Place in oven and cook about ten minutes, until taco shells hold their shape. Let cool.
In a small bowl combine the cumin and paprika. Rub into pork loin and place in slow cooker.
In another small bowl whisk the honey and lime juice together. Pour over pork in slow cooker and cook on low 6-8 hours.
Shred the pork using two forks and mix with the juices inside the slow cooker.
Fill taco shell with pork and desired toppings. Enjoy!
