Homemade Noodle & Sauce Recipe

Tomato, Spinach & Garlic Angel Hair
Serves 4

· Sea salt
· 1 pound Harmons artisan tomato-spinach-garlic angel hair pasta
· 1/4 cup (1/2 stick) unsalted butter
· 1/4 cup grated parmesan cheese

1. Bring a large pot of salted water to a boil over high heat. When the water is boiling, add the pasta and cook until al dente, according to the instructions. Reserve 1 cup pasta water.

2. Meanwhile, heat a large frying pan over high heat. Add the butter and cook until lightly browned. Add the pasta and toss to combine. Add the parmesan cheese and toss to combine.

Summer Squash Noodles
Use a spiralizer to make “noodles” out of summer squash.
Serves 4

1/4 cup (1/2 stick) unsalted butter
1 shallot, minced
1 garlic clove, minced
4 cups zucchini noodles (about 4 zucchini)
Kosher salt
Freshly ground white pepper
1. Heat a large nonstick frying pan over medium-high heat. Add the butter and when melted, add the shallot. Cook until translucent, about 2 minutes. Add the garlic and cook until fragrant, about 30 seconds.

2. Add the zucchini “noodles” and season with salt and pepper. Toss to combine and cook until crisp-tender, about 5 minutes.
