Todd and Sheri Hall from Duerden’s Appliance & Mattress, joined Nicea DeGering with a perfect dessert recipe for the summertime. You’ve heard of the infamous peach cobbler, but how about blueberry nectarine cobbler? Todd and Sheri shared the recipe and showed us how to make it!
Blueberry Nectarine Cobbler
5 ripe nectarines, peeled, pitted and diced
1 cup fresh blueberries, washed and dried
juice from 1/2 of a lemon
1 1/2 TBS. cornstarch
1/4 cup granulated sugar
1/3 cup melted butter
2/3 cup flour
1/2 cup oats
1/2 cup brown sugar
1/4 tsp. baking soda
2 TBS. chopped pecans
Place diced nectarines and blueberries in a bowl and stir in lemon, cornstarch and granulated sugar. Place fruit mixture in an 8″ cooking dish and set aside.
For the topping, combine butter, flour, oats, brown sugar, baking soda and pecans. Sprinkle the topping generously over the top of the fruit mixture and bake at 325 degrees for 40 minutes. Or in the Wolf Convection Steam oven at 345 for 40 minutes.
Serve with vanilla ice cream or whipped cream.
