Bacon Mac and Cheese
 
Serves 8
Prep time 30 minutes
Cook time: 45 minutes
 
1 pound of bacon, chopped and cooked
1 pound elbow macaroni, cooked and cooled
4 cups milk
2 sprigs thyme
2 sprigs rosemary
2 garlic cloves, sliced
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 1/2 cups white cheddar, shredded
3 cups smoked gouda, shredded
½ cup chopped flat-leaf parsley
½ cup chive, chopped
 
Preheat an oven to 400 degrees.  In a pot, warm the milk, thyme, rosemary, and garlic.  In another pot, melt the butter over medium heat.  Once melted, slowly add the flour.  Whisk to ensure there are no lumps.  After cooking the flour for about a minute.  Strain the milk mixture into the flour and butter mixture.  Whisking again to make sure there are no lumps.  Warm this mixture over medium heat and cook until thickened.  Then slowly add the cheese.  Once the cheese has been melted, season with salt and pepper and add it to the noodles, parsley, and bacon.  Place the mixture into a prepared backing dish and place in the oven for 35 minutes. Remove from the oven and top with chives.
