THE Carrot Cake
 
Ingredients:
  • 1 Tablespoon Baking Soda
  • 1 tablespoon salt
  • 2 Cups Flour
  • 2 Cups Sugar
  • 2 tablespoon Cinnamon
  • 1 1/2 Cup Wesson Oil
  • 4 Eggs
  • 1 Tablespoon Vanilla
  • 4 Cups (hand grated) Carrots
Directions:
  1. Sift dry ingredients together. Beat Eggs, and add vanilla and oil.
  2. Mix with dry ingredients.
  3. Mix in carrots.
  4. Bake in 3-9 inch (greased and floured) cake pan for 30-35 minutes at 350 degrees.
 
Frosting
Ingredients:
  • 2- 8 oz pkg of Cream Cheese
  • 2 sticks butter
  • 1 Cup Coconut
  • 1 Cup chopped Pecans
  • 2 boxes Powdered Sugar
Directions:
  1. Mix in all ingredients together.
    • (You can leave out the Pecans or the Coconut)
  2. Spread on cooled cake.
