Manuel Castillo has been the chef at Blue Iguana for 18 years. He joined us to kick off the Downtown Dine O’ Round, where 45 restaurants in downtown Salt Lake City will offer special menus from September 9-25.
Three course dinners will be offered for $15 or $35 and two-item lunches for $5 or $10. 
Manuel made Puntas De Filete,(grilled sirloin tips, bacon sauteed with onions and serrano peppers served atop Almond Mole). This is Blue Iguana’s dinner offer during Dine O’ Round. They will also be featuring stuffed avocados and salmon salad for DineO’Round.
