Melon Salsa with Grilled Shrimp

Melon Salsa with Grilled Shrimp

Serves 4

Ingredients for the salsa:

  • 1 cup chopped watermelon
  • 1 cup chopped cantaloupe
  • 1 cup chopped honeydew melon
  • ¼ red onion, chopped
  • 1 Tbsp minced jalapeno, optional
  • 1 avocado, pitted and chopped
  • 2 Tbsp chopped fresh basil
  • 2 limes, juiced
  • 1 Tbsp rice vinegar
  • 3 Tbsp extra-virgin olive oil
  • Salt and freshly ground pepper

Ingredients for the shrimp:

  • 1 lb jumbo or colossal shrimp, shelled, deveined and tails removed
  • Salt and freshly ground pepper
  • Olive oil

Instructions for the salsa:

  1. In a large bowl, combine the watermelon, cantaloupe, honeydew, red onion, jalapeno, if using, avocado, basil, lime juice, rice vinegar, and oil.
  2. Season with salt and pepper.

Instructions for the shrimp:

  1. In a bowl, season the shrimp with salt and pepper and toss.
  2. Prepare a grill pan or grill over medium-high heat.
  3. Add 2 tablespoons oil and when oil shimmers, add shrimp and cook until pink on one side, about 2 min. Turn over and cook on second side until opaque and pink on the second side.
  4. Transfer to a plate.
  5. Serve shrimp whole or chopped into pieces with salsa.
