Grilled Pork Chops
Ingredients:
½ “ pork chops brushed with melted butter
Directions:
- Season with salt, pepper and a dash of brown sugar
- Grill the meat for about a minute on each side and garnish with fresh pineapple wedges and apple rings
Southwest Chopped Salad
Ingredients:
- 1 head romaine lettuce and medium dice
- 1 bell pepper, remove the seeds and ribs and dice into a medium to small dice
- 4 roma tomatoes, medium to small dice
- 2 ears of corn, cut off the cob
- 4 green onions, cut into thin slices
- 1 avocado diced
- 1 (15oz) can of black beans, rinse and drain
Directions:
- Combine all the ingredients into a bowl and toss and add dressing (recipe below)
Homemade Dressing
Ingredients:
- 1 C ranch dressing
- 1/8 t salt
- 1 tomatillo, peel of the outer husk and cut into 4 pieces
- 1 bunch cilantro leaves
- Juice from one lime
