Grilled Pork Chops with a Southwest Chopped Salad

Grilled Pork Chops


½ “ pork chops brushed with melted butter


  1. Season with salt, pepper and a dash of brown sugar
  2. Grill the meat for about a minute on each side and garnish with fresh pineapple wedges and apple rings 

Southwest Chopped Salad 


  • 1 head romaine lettuce and medium dice
  • 1 bell pepper, remove the seeds and ribs and dice into a medium to small dice
  • 4 roma tomatoes, medium to small dice
  • 2 ears of corn, cut off the cob
  • 4 green onions, cut into thin slices
  • 1 avocado diced
  • 1 (15oz) can of black beans, rinse and drain


  1. Combine all the ingredients into a bowl and toss and add dressing (recipe below)

Homemade Dressing


  • 1 C ranch dressing
  • 1/8 t salt
  • 1 tomatillo, peel of the outer husk and cut into 4 pieces
  • 1 bunch cilantro leaves
  • Juice from one lime


  1. Blend together
