Chef Leslie Sommerdorf from Harmons and is back in the kitchen swtihing it up! Instead of breadsticks, she is making Cauliflower Breadsticks, for a healthy and lighter side dish and Spinach Balls!
Cauliflower Breadsticks & Spinach Balls
Ingredients:
- 4 cups riced cauliflower
- 4 eggs
- 3 cups shredded mozzarella cheese, divided
- 3 tsp oregano
- 4 cloves garlic, minced
- Salt and freshly ground pepper
- Harmons Marinara Sauce, warmed
Direcetions:
- Preheat oven to 425 degrees. And line two baking sheets with parchment paper.
- Place the riced cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes. Let the cauliflower cool just until there’s no more steam. Place cauliflower in a large bowl and add the eggs, 2 cups mozzarella, oregano, garlic, salt and pepper and mix to combine.
- Divide the mixture between the 2 prepared baking sheets and shape into rectangles. Bake the cauliflower until golden, about 25 minutes. Sprinkle with remaining 1 cup mozzarella cheese and put back in the oven for another 5 minutes or until cheese has melted. Slice and serve.
Spinach Balls
Makes 15 balls
Ingredients:
- 1 (10 oz) package of chopped, frozen spinach
- 1 egg
- 3/4 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 Tbsp melted butter
- 2 Tbsp plain yogurt
- 2 Tbsp chopped green onions
- Salt and freshly ground pepper
- 1/2 tsp paprika
- Harmons Marinara Sauce
Directions:
Preheat oven to 350 degrees.
