Caytlin McCleery joined Good Things Utah with her son Mason, to share a quick and easy recipe for meatloaf.
Quick & Easy Meatloaf
- 1-1/2 pounds lean ground beef or turkey or ground pork
- 1/2 cup Bob’s Red Mill Old Fashioned Oats
- 3/4 cup finely chopped onion
- 1/2 cup ketchup
- 1 egg, lightly beaten
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- *ALTERNATE -If you have a favorite BBQ rub, about 2 tbsps of that!
Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly.
Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef and pork 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. Top with a yummy cheese, or BBQ sauce!
To cook in the smoker, Caytlin recommends smoking for 1 hour at the lower smoke setting:160-180° and then increasing temp to 350 until the correct internal temp is reached.
Making these into smaller, individual meatloafs will help speed up the time in cooking. Depending on the size, make sure they are cooked to the proper internal temp.
Muffin tins are a great way to make them into individual sizes as well.
