Pina Colada Parfait with Stroop Waffle Crumble
- 1 pineapple, diced
- 1 container plain or vanilla yogurt
- 1 cup shredded coconut
- 4 stroop waffles
- 1/2 cup honey roasted peanuts
- 1/8 cup chia seeds
- 1/2 stick of butter, cold + cut into cubes
- 2 Tbsp honey
Step 1: chop the waffles and peanuts.
Step 2: combine in a bowl with chia seeds, coconut, butter, and honey
Step 3: spread evenly onto a cookie sheet lined with silpat
Step 4: bake at 375 for 18-20 minutes. Stirring half way through
Step 5: let cool and layer into small glass jars with yogurt and pineapple
