The 2nd annual Utah Healthy Food Expo is around the corner and Chef Brandon Price from Even Stevens is with us today showing a sneak peek of the demo he will be doing at the expo, jackfruit carnitas.
 
Recipe: Jackfruit Carnitas.
  • 1/2 fresh green jackfruit(skin removed and chopped into chunks) or 6 cans green jackfruit(drained and rinsed)
  • 1/2 cup olive oil
  • 10 whole cumin seeds
  • 6 cloves of garlic
  • 1 liter of orange juice
  • 4 jalapeños
  • 1 lemon (zest and juice)
  • 1 lime (zest and juice)
  • 4 Tablespoons of chopped cilantro
  • 1 tablespoon chopped oregano
Method: place olive oil in pan over medium heat. Add cumin and garlic and sauté for 2-3 minutes until cumin is fragrant. Add jackfruit and stir frequently for about a 2 minutes. Add the rest of the ingredients and simmer for 20 minuets or until the jackfruit is tender and sauce is reduced.
