Baker Cherie Mull from The Sugar Bee showed us how to decorate three amazing cakes for Easter. Watch to see how she puts them together!

Carrot Cake


  • 2 1/4 c flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 c coconut, ground
  • 1/2 c raisins, ground
  • 1/2 c walnuts, ground 
  • 3 c carrots, peeled and grated
  • 2 c sugar
  • 1 c oil
  • 4 eggs


  1. Grease and flour baking pans or line with parchment paper. 
  2. Measure flour, salt, baking soda and cinnamon into a bowl and stir until well mixed.
  3. In a separate bowl, mix coconut, walnuts, and raisins. Grind this mixture in food processor or blender until very fine.
  4. Peel and grate carrots.
  5. In a separate large bowl, combine sugar and oil and mix well.
  6. Add eggs and beat until creamy.
  7. Add dry ingredients and beat until well blended.
  8. Add nut mixture and carrots and beat until blended.
  9. Divide equally into baking pans (three 8 inch pans, two 9 inch pans, four 6 inch pans, or a 9×13 inch pan) and bake at 350 for approximately 35-45 minutes. Baking time will vary depending on which pans you use. Check with a toothpick, it is done when it comes out clean.
  10. Allow to cool 10 minutes before removing from pans and placing on cooking racks. Cool completely before frosting or filling.

This cake is delicious with a classic cream cheese frosting.  For decorating purposes, Cherie used a vanilla buttercream frosting with a whipped cream cheese filling instead.

Whipped Cream Cheese Filling


  • 8 oz package cream cheese
  • 1/3 c sugar
  • 1 tsp vanilla
  • 1 c heavy whipping cream


  1. Beat cream cheese and sugar until soft and fluffy, set aside. 
  2. Whip the cream and vanilla until stiff peaks form.
  3. Fold whipped cream into cream cheese mixture.

Vanilla Buttercream


  • 2 sticks unsalted butter, room temp
  • 4 c powdered sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3 Tbsp heavy whipping cream or milk


  1. Beat butter until soft and creamy.
  2. Add salt, half of powdered sugar and mix.
  3. Add the remaining powdered sugar as well as the vanilla and cream/milk.
  4. Beat until light and fluffy. Stir with a wooden spoon or rubber spatula to remove air bubbles before frosting.
