Kendra Nani joined us today with one of the best lunch ideas for the summer! Not only does she share her recipe for a Green Goddess Cool Wrap, but three easy lunch ideas for your kids, using the same ingredients, as well!

Green Goddess Cool Wrap

Ingredients:

  • 1 c shredded chicken
  • 1/4 c green goddess 
  • 1T Greek yogurt 
  • 1T light mayo
  • 1/3 c Matchstick carrots
  • 1 serving pasta zero noodles
  • 1/2 cucumber
  • Fresh cilantro
  • 1/2 Avocado
  • Swiss chard leaves

Directions:

  1. Mix together green goddess, mayo and greek yogurt, add to shredded chicken and mix.
  2. Lay Swiss chard leaves on counter and layer chicken, carrots, noodles, cucumber sticks and fresh cilantro!
  3. Top with avocado slices and roll length wise, with the spine of the leaf!
  4. Slice in half and enjoy!
