Kendra Nani joined us today with one of the best lunch ideas for the summer! Not only does she share her recipe for a Green Goddess Cool Wrap, but three easy lunch ideas for your kids, using the same ingredients, as well!
Green Goddess Cool Wrap
Ingredients:
- 1 c shredded chicken
- 1/4 c green goddess
- 1T Greek yogurt
- 1T light mayo
- 1/3 c Matchstick carrots
- 1 serving pasta zero noodles
- 1/2 cucumber
- Fresh cilantro
- 1/2 Avocado
- Swiss chard leaves
Directions:
- Mix together green goddess, mayo and greek yogurt, add to shredded chicken and mix.
- Lay Swiss chard leaves on counter and layer chicken, carrots, noodles, cucumber sticks and fresh cilantro!
- Top with avocado slices and roll length wise, with the spine of the leaf!
- Slice in half and enjoy!
