Chicken Enchilada Jaffle Recipe (Busy Mama Version)


  • 1 Shredded Rotisserie Chicken
  • 1 Onion
  • 2 Tomatoes
  • 1/3 cup cilantro
  • Juice 1 Lime
  • Salt & Pepper
  • 1/2 Red & Green Bell Peppers
  • 1 Can Red Enchiladas Sauce
  • Shredded Cheddar Cheese
  • Pickled Jalapenos (Optional)


  1. Sauté the ½ Onions and all the Bell Peppers with a splash of Canola Oil until soft
  2. Add the shredded Chicken to the mix and stir for 1min
  3. Add the Enchiladas Sauce and simmer on low for 10 min
  4. Pico- Chop the Tomatoes and add to the left over chopped onion, add optional Jalapenos, add cilantro, lime juice and S&P and stir
  5. Take 1 slices of bread & Layer the chicken, Cheese &
  6. Pico de Gallio.
  7. Take 2nd slice and place on top
  8. Place sandwich in the Jaffle iron, close and remove any remaining crusts
  9. Cook over heat source
