Ricci Sorensen stopped by to share a healthy spin on cheesy alfredo sauce! This is a versatile sauce you can serve with sweet potato noodles, zucchini noodles, pasta, biscuits, grilled veggies, broccoli, etc.
Caulfredo Sauce (Alfredo sauce)
Ingredeints:
3-4 C Steamed cauliflower or 1 24oz. package of cauliflower florets
1 C Cream from a can of coconut milk
1/2 onion large onion or 1 small onion, diced
3-4 cloves garlic, pressed
1/2 C water
2 Tbsp nutritional yeast
2 Tbsp arrowroot starch/flour
1 tsp lemon juice (fresh)
Salt and pepper
Directions:
- Steam cauliflower
- Sauté onions, garlic, salt, and pepper in a little olive oil on medium/low until tender
- After cauliflower is tender and onion mixture is tender add everything in a blender and blend until smooth.
This sauce is so versatile! You can serve it over sweet potato noodles, zucchini noodles, pasta, biscuits, grilled veggies, broccoli, etc.
You can store it in the fridge and it warms up really well.
