Caprese Sandwich

Ingredients
  • Sliced sourdough bread
  • 4 Tbsp pesto 
  • 2 tomatoes sliced
  • 1/4 C fresh basil
  • 1 fresh mozzarella round sliced into 1/4 pieces
  • 1 Tbsp balsamic vinegar
  • Olive oil
  • Sea salt
  • Black pepper
 
Directions:
  1. Turn oven on low broil
  2. Prepare a baking sheet lined with foil
  3. Top bread with basil
  4. Place tomatoes and cheese
  5. Brush top of sandwich with olive oil
  6. Sprinkle with sea salt and pepper
  7. Broil for about 5 minutes until cheese is melted and bread is browning
 
 
Ingredients:
  • 1/2 small red onion sliced thinly
  • 1/2 C white wine vinegar 
  • 1 head of Bibb lettuce ripped into small pieces
  • 2 vine ripened tomatoes sliced
  • 1/2 English cucumber slices thinly
  • 1/2 lemon juice
  • 2 Tbsp olive oil
  • Sea salt
  • Black pepper
 
Directions:
  1. Place onions in a small bowl and cover with vinegar. 
  2. Let onions pickle as you assemble the salad.
  3. Place lettuce, tomatoes + cucumbers in a large bowl
  4. Add lemon juice and olive oil on salad, toss
  5. Top with onions
  6. Sprinkle with salt and pepper
