Baked Pumpkin Donuts

‘Tis the season for pumpkin everything, everywhere… including in our kitchen! Kendra Nani joined us to share her recipe for baked pumpkin donuts, the perfect treat for fall.

Baked Pumpkin Donuts

Ingredients:

  • 1 C + 1/4 C all purpose flour
  • 1/2 C light brown sugar, packed
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 C pumpkin pie puree
  • 2 1/2 Tbsp unsalted butter, melted
  • 1/2 C milk 

Cinnamon Sugar Coating:

  • 3 Tbsp unsalted butter, melted
  • 1 C sugar
  • 1 1/2 Tbsp cinnamon

Vegan: 

  • 1 C + 1/4 C all purpose flour
  • 1/2 C light brown sugar, packed
  • 1/2 tsp salt 1 tsp baking powder
  • 1/4 C pumpkin pie puree
  • 2 1/2 Tbsp coconut oil, melted
  • 1/2 C almond milk

Cinnamon Sugar Coating:

  • 3 Tbsp coconut oil
  • 1 C sugar
  • 1 1/2 Tbsp cinnamon

Instructions:

  1. Mix wet ingredients and then add dry ingredients.
  2. Mix until incorporated but don’t over mix.
  3. Pour into greased donut pan and bake at 350 for 10-11 min!
  4. Let cool.
  5. Melt butter and place in bowl.
  6. In separate bowl mix sugar and cinnamon. 
  7. Dip donut in butter and then in sugar mixture!
  8. Set on wire rack!
