  • 8 ounces powdered sugar
  • 8 ounces fine almond flour
  • 7 ounces egg whites , room temperature
  • 6 ounces granulated sugar
  • *Zest from 1 lime, dried
  • *Zest from 1 orange, dried 
Process almond flour, powdered sugar and zest until fine as possible. Pass almond mixture through a fine-mesh sieve pressing down on clumps. Sift through sieve again.
Using medium speed whip egg whites and color until foamy, slowly add granulated sugar and increase speed to medium-high, when the whites start to take on more consistency, increase to high speed, mixing until stiff peaks are formed.  
Add dry ingredients into egg white mixture in 3 different additions. Fold with a spatula from bottom of bowl upward, then press flat side of spatula firmly through middle of mixture. Repeat just until batter flows like lava. 
Fill piping bag fitted with 3/8-inch round tip. Dab some batter remaining in bowl onto corners of 2 heavy 13-inch x 18-inch baking sheets; lined with parchment.
With tip 1/2-inch above sheet, pipe batter into a 1 1/2-inch circle, then swirl tip off to one side, space 2-inches apart. Tap sheets firmly against counter to release air bubbles.
Let dry for 45  to 60 minutes. 
Pre-heat oven at 300 degrees. Bake 1 sheet at a time for 16 to 20 minutes on lower rack. Rotate halfway through. Cool completely before removing from parchment paper. 
*Our chef says she likes to put zest on baking sheet at 325 degrees for 5 to 7 minutes or until completely dry. Check at two minutes and stir. Make zest is cool before using in macaron. 

Margarita Ganache Filling 
  • 1 pound white chocolate
  •  3.5 ounces lime juice, zest limes before juicing
  • 2 ounces orange juice, juice oranges before juicing
  • 2 ounces tequila
  • 1/2 teaspoon fleur de sel
Melt chocolate over a double broiler. Bring lime juice, orange juice, zests and tequila to a boil. Strain juice mixture over melted chocolate, mix until smooth. Stir in fleur de sel. Put in dish, cover with plastic wrap , chill unit firm. 
Pipe the filling on one of 2 macarons and stick together. Enjoy.
