Sicilian Eggplant Parmesan:
1 whole eggplant
¼ cup olive oil
½ cup white wine
Salt
Marinara
1-2 cups grated mozzarella
Grated parmesan
crushed red pepper optional
Extra virgin olive oil
Bake at 500° for 15 minutes
