Kneaders Sugar Cookies

INGREDIENTS:
 
2 cups butter
2 ¼ cups sugar

4 large eggs
1 cup milk

7 ¾ cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp lemon flavor
½ tsp salt
¼ tsp nutmeg
1 Tbsp honey

1. Cream together butter and sugar until fluffy.
2. Add eggs, then milk.  Scrape the sides of the bowl often.
3. Stir in remaining ingredients.  Dough will be soft and sticky.
4. Place dough on well floured pastry cloth or workspace.
5. Knead in just enough flour to make dough workable.  Dough will be very soft.  It is best to knead with a rolling motion so you have a smooth surface and you will not get cracks on the tops of your cookies.
6. Gently roll out to 3/8 inch thick.
7. Cut into desired shapes and place on baking sheet lined with parchment.
8. Bake at 325 for 10-12 minutes or until just the edges barely start to change colors. Makes approx. 4 dozen.

Icing

4 ½ cups powdered sugar
4 Tbsp corn syrup
3 Tbsp milk
¼ tsp lemon flavor

1. Mix together all ingredients until smooth.

Dip cookie in icing and smooth with side of palm of hand.  Let set.  Decorate with icing, chocolate chips, candy, coconut etc.

I think Kneaders cookies are amazing! Thanks for sharing your recipe. Anyone who wants to change the recipe is not wanting to make them like Kneaders! I had the same problem with the icing I just kept adding milk until I liked it. I also think the cookie cutters I used made bigger cookies, I only got about 2 1/2 dozen. I did bake them a little longer, because they were bigger, and they were great. And better yet mine turned out almost as good and buying them at Kneaders.

Scottie: I got my rolling pin online: www.shopcountrykitchen.com I also bought a pastry cloth. Love it! The rolling pin is called "The Smart Rolling Pin" My cookies didn't turn out very well. Too cakey or biscuit like. Maybe I mixed it too long. Guess I need to try again or get a different sugar cookie recipe. Happy Valentines!! :)

one other thing to my previous suggestion. I used half butter and half shortning. My other recipes don't call for butter at all. also don't use the recipe suggested on another channel using sour cream. For some reason they aren't as good.

I have made sugar ccokies for 35 years and lost my favorite recipe. These did not taste right until I added mexican vanilla. Probably 2 t. for this recipe. Nutmeg is probably not necesary. I always soured the milk with a tsp of vinegar or lemon juice. I would not worry about the lemon. Also I bake at 375 for 7 minutes and they worked much better.

After a big search for the lemon flavoring. I finally found it at Ridleys in Tremonton. Before I found the powdered lemon flavoring, I went ahead and used 1/2 teaspoon of Lemon Juice. The cookies tasted fine. I also did not like the icing recipe and used my own tried and true recipe. The cookies were a big hit.

Did any one else have a problem with the icing recipe? I had way too much powdered sugar for the amount of liquid. Is there an error in the recipe? As for the cookie cutters, I found an inexpensive metal set at BB&Beyond for $1.50 and squeezed them together to elongate them. They came out great, just the shaped I desired.

Did anyone else have a problem with the icing in this recipe? It has too much powdered sugar for the amount of liquid. I'm wondering if the recipe is correct? As for the elongated heart cookie cutters, I purchased inexpensive metal cookie cutters at BB&Beyond for $1.50 a set. To elongate them, I just squeezed them together. Worked great for the shape I wanted.
