It's Stress-Free Cooking with Mama's Stuffed Bell Peppers!
1 Lb. ground beef
6 large bell peppers
1 pkg. Knorr Rice Sides "Steak Fajitas" Flavor
½ cup picante sauce
1 cup cheddar cheese, shredded
salt and pepper to taste
Cut off top of each pepper and clean out seeds and pith. Blanch peppers for 3 minutes; place upside down on paper towels to drain.
Follow microwave directions for rice. While rice is cooking, fry ground beef with salt and pepper; mix in picante sauce when beef is browned.
Preheat oven to 350 degrees.
Mix rice and meat mixture together.
Place peppers in 11x7-inch glass dish; fill half way with meat mixture, then add a couple of tablespoons of cheddar, topping it off with more meat mixture. Bake for 20 minutes. Top with remaining cheese and bake 10 minutes more.
