Bonsai Soup (Butternut Squash)
Soup
1 qt Water
1 Tbsp Chicken Base
1 med. Butternut Squash
1/3 cup sugar
½ cup Heavy Cream
Combine water, chicken base and squash then bring to a boil until squash is soft. (Prepare Roux while waiting for squash to soften.) Remove from heat and puree with a stick mixer or blender. Place back on stove on medium heat and add sugar and Heavy cream and Roux.
Roux:
½ cup flour
1 stick butter
Slowly melt butter in saute pan. Once melted add flour constantly stirring until light fluffy roux is achieved.
Garnish
Scallions, finely chopped
