Greens, Eggs, and Hams Version 1
- Olive Oil
- 1 slice prosciutto
- 1 slice ham
- 1/4 Tsp minced rosemary
- 1/2 Tsp minced sage
- 2 eggs
- Dash salt
- Dash pepper
- Shredded Monterrey Jack cheese
Preheat oven to 350
Grease a 6-8 ounce ramekin with olive oil
Add ham and prosciutto, top with rosemary and sage.
Put a touch of olive oil on the rosemary and sage.
Gently crack two eggs into the ramekin.
Add salt and pepper.
Top with shredded cheese.
Place in oven for 18-20 minutes (cheese will be brown and a knife inserted into the ramekin will come out clean).
Greens, Eggs,and Hams Version 2
- 2 slices pancetta
- 2 Tbs coarsely minced arugula
- 2 eggs
- Dash salt
- Dash pepper
- Thinly sliced Brie cheese
Preheat oven to 350
Add pancetta to the bottom of a ramekin (this version doesn't need oil as the pancetta has enough to keep the ramekin clean
Add minced arugula on top of the pancetta.
Gently crack two eggs into the ramekin.
Add salt and pepper.
Top with slices of brie.
Place in oven for 18-20 minutes (cheese will be brown and a knife inserted into the ramekin will come out clean).
