White Bean and Rosemary Soup

Just because you're crazy busy in December doesn't mean you can't prepare a good, nutritious meal for your family.  Becky Olsen with Utah's own "Shirley J" has a simple "White Bean and Rosemary Soup" recipe for you.

Ingredients:

  • 2 cup Shirley J Universal Sauce
  • 8 tsp .Shirley J Chicken Bouillon
  • 4 qts. Water
  • 2 Tbsp. Butter
  • 8 cups Yellow Onions, sliced
  • 2 Tbsp. Garlic Minced
  • 4 (15 oz Cans) Cannellini Beans, white
  • 2 Sprigs Fresh Rosemary
Directions:
In a stock pot on medium heat, sauté the onions, butter and garlic until golden brown and limp, then add the water, Universal sauce and Bouillon. Stir with a whisk until it is smooth then bring mixture to a boil, reduce heat, add rosemary, and simmer for 10 minutes. Add the beans and cook for an additional 5 minutes.
