3 Bean Chili by Sugar House BBQ
Ingredients:
- ¾ cup bulgar
- 1 cup orange juice
- ½ cup olive oil
- 1 quart chopped yellow onions
- 1/3 cup chopped garlic
- 2 diced red peppers
- 1 Lb. corn kernels
- ½ Lb. green beans
- 1 (16 oz.) can kidney beans
- 1 (16 oz.) can chick peas(garbanzo beans)
- 1 (28 oz.) can diced tomatoes
- 3 cups vegetable stock
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 Tbsp. dried oregano
- 2 tsp. dried thyme
- ½ tsp. ground cinnamon
- salt and pepper to taste
Directions:
Combine the bulgar and orange juice and set aside. Heat the oil in a stock pot. Add the onion, garlic, and peppers. Saute until almost soft. Add the chili powder, thyme, cumin, oregano, and cinnamon. Cook for about another 5 minutes. Add the tomatoes(including the juice) and the stock. Bring to a simmer and cook for 20-30 minutes. While the chili is simmering, place another pot filled with water, and a little salt, on the stove. Blanch the green beans for about 5 minutes, strain and cool in a water bath. Add the bulgar/orange juice mixture to the chili. Simmer until the chili has thickened considerably. Add the 3 beans and the corn and cook until hot. Season with salt and pepper to taste.
