Tom Yum Gai - Hot and Spicy Soup
5 oz. Chicken
3 C. Water
1 T. Shrimp paste
1 T. Chili paste w/ soybean oil
5-6 Mushrooms
1 t. Cilantro
1 t. Green onion
3-4 pieces Lemon grass
3-4 pieces Galangal
3-4 Lime leaves
4 T. Lime Juice
1 T. to ¼ C. Sugar (to taste)
1 t. Salt
Place water in sauce pan and begin heating. Add lemon grass, galangal, lime leaf. Stir in and bring temperature to just below a boil. Add shrimp paste, chili paste, lime juice, sugar and salt. Add chicken and let cook at just below boiling temperature until chicken is cooked. Add mushrooms, cilantro and green onions. Mix lightly. Ready to serve.
