Sweet Potato au Gratin

Kimi Eklund from Kimi's Mountainside Bistro has a recipe for Sweet Potato au Gratin.

Ingredients:

  • 6 lbs sweet potatoes
  • 3-5 cups heavy whipping cream
  • 8 oz. can chipotle peppers in sauce
  • ½ cup honey
  • 1 large yellow onion
  • 1 bunch cilantro
  • 1 bunch parsley
  • 1 cup grated Parmesan
  • 1 cup sour cream
  • 1/2 cup thinly chopped scallions
  • olive oil, salt and pepper

First puree chipotle peppers, herbs and honey in a blender, set aside.  In an 8 quart sauce pot, sautee onions with a little olive oil until tender. add cream, a little chipotle-honey mixture, sliced potatoes, salt and pepper. Bring to a simmer and make sure it's not too spicy, sweet or salty. After you reach a simmer, pour into a baking dish of your choice about 1 inch high. Make sure the liquid barley covers the top of the potato mixture and top with Parmesan. Bake for 30 minutes on 325 degrees uncovered. Fold scallions, sour cream, salt and pepper together for a garnish (scallion creme fraiche). Once it is done, let sit for 20 minutes, cut and reheat if necessary. Put on a dollop of scallion crème fraiche to finish.
