Roasted Zucchini & Yellow Squash Salad

4 Zucchini
4 Yellow Squash
1 red onion
Salt and pepper to taste
Extra virgin olive oil
4 Lemons

Combine all ingredients and the put on to a sheet pan that has been sprayed
Put into a 375° oven and roast for 30 minutes.
Remove from oven and squeeze fresh lemon juice, mix well serve or let cool in fridge and serve later.
This can be prepared ahead of time.

If you want fresh herbs I suggest chopped oregano and flat leaf parsley to added before
Serving.


Tomato and Avocado Salad

5 Tomatoes, sliced
3 Avocados, diced
Salt and pepper to taste
2 Lemons
Extra virgin Olive Oil

Arrange tomato slices neatly on a plate
Put the Diced Avocado on top of tomatoes
Season with salt and Pepper
Squeeze the lemon juice on top then drizzle with olive oil.

I like to eat this as is if you want to dress this up I would serve on top of spring mix.
