Spinach Salad w/ Honey Bacon Vinaigrette
2 oz. Champagne or white wine vinegar
½ cup Bacon, chopped
1 Tbsp. Dry Parsley
1 small Shallot, diced
1 tsp. Garlic, chopped
5 oz. Honey
7 oz. Dijon Mustard
2 oz. Cold Water
7 oz. Canola Oil
Mix all ingredients except oil with a hand mixer/chopper(burr mixer) and blend. Slowly add oil and thicken. Refrigerate. Heat when ready to use or leave cold.
