 Prepare smoker or set up soaked wood chips in foil pan and place on the  coals in  pre-heated BBQ. When smoke appears, reduce heat.

 2 lbs. Ground Beef     

Spread loosely on a baking sheet  Season with salt & pepper and place on BBQ grate. Close lid and allow to smoke at low heat for 1 hour. Meat will not be fully cooked. Place beef in skillet add 1/2 cup chopped onions and fully brown. Check seasoning for salt & pepper. When done, drain beef and keep warm.


Chipotle BBQ Sauce


4 C. Catsup

1 C.  Brown Sugar     

In separate sauce pan, gently warm catsup with brown sugar. When dissolved, taste to balance sweet to sour for your palette.

1 tbsp Cinnamon

1 tbsp Dry Mustard

1 tbsp Garlic Powder

1 tsp Allspice

1 tsp Cloves                 

Stir in all spices and taste to balance seasoning.

 

1-4 Chipotle chili in adobo sauce     

Remove stems and seeds, finely mince chills in sauce and add 1 or 2 at a time to the sauce mixture. Taste after each addition to balance heat level for your family palette.

 

NOTE:      Because each brand of catsup varies with vinegar and spice combinations, it is very important to taste each layer in order to balance your flavors perfectly.
