Smoked Duck Quesadilla
Ingredients:
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Poblano Pepper
1 Yellow Onion
1 Smoked Duck Breast
6 oz Cream Cheese Softened
16 oz Pepperjack Cheese
½ Bunch Cilantro Chiffonade
Salt and Pepper to Taste
Butter as needed
Flour Tortillas
Saute the peppers and onions until the onions are translucent, place in refrigerator to cool down. Peel back fat cap from duck breast and discard, small dice the breast meat. Combine peppers, onions, duck, cheese, and cilantro in bowl and combine, season with salt and pepper as needed.
Cut flour tortillas into triangles, place dollop in the center and fold corners tightly to meet in the center. This should incase the filling forming another smaller triangle.
Cooking Method:
On medium heat melt butter in a non-stick sauté pan. Place Quesadilla fold side down until golden brown, flip and continue cooking the other side until golden brown and heated through.
