Roast Beef Tenderloin with Caesar Crust

Chef Dave Prows from Costa Vida has a recipe that will make your mouth water. It is Roast Beef Tenderloin with Caesar Crust.
Ingredients:- 4 lbs. center cut beef tenderloin
- 1 Tbsp. kosher salt
- 4 tsp. freshly ground black pepper
- 2/3 cup fresh breadcrumbs
- 2/3 cup finely grated Parmesan
- 2/3 cup mayonnaise
- 4 tsp. Dijon mustard
- 4 tsp. finely grated lemon zest
- 2 tsp. Worcestershire sauce
- 2 garlic cloves, finely chopped
Method:
- Season tenderloin lightly with salt and pepper, wrap in plastic; refrigerate overnight
- Uncover tenderloin and let stand at room temperature for 2 hours
- Preheat oven to 400. Place tenderloin of a sheet pan
- Pulse 4 tsp black pepper and remaining ingredients in a small food processor until well blended. Generously and evenly spread and pack Parmesan mixture around tenderloin
- Roast until golden brown and an internal temp of 120-125, about 30 minutes
- Transfer to cutting board. Let rest for 15 minutes. Slice and serve
