Roast Beef Tenderloin with Caesar Crust

Chef Dave Prows from Costa Vida has a recipe that will make your mouth water.  It is Roast Beef Tenderloin with Caesar Crust.

Ingredients:
  • 4 lbs. center cut beef tenderloin
  • 1 Tbsp. kosher salt
  • 4 tsp. freshly ground black pepper
  • 2/3 cup fresh breadcrumbs
  • 2/3 cup finely grated Parmesan
  • 2/3 cup mayonnaise
  • 4 tsp. Dijon mustard
  • 4 tsp. finely grated lemon zest
  • 2 tsp. Worcestershire sauce
  • 2 garlic cloves, finely chopped

Method:

  • Season tenderloin lightly with salt and pepper, wrap in plastic; refrigerate overnight
  • Uncover tenderloin and let stand at room temperature for 2 hours
  • Preheat oven to 400. Place tenderloin of a sheet pan
  • Pulse 4 tsp black pepper and remaining ingredients in a small food processor until well blended. Generously and evenly spread and pack Parmesan mixture around tenderloin
  • Roast until golden brown and an internal temp of 120-125, about 30 minutes
  • Transfer to cutting board. Let rest for 15 minutes. Slice and serve
