Raspberry Chipolte Chicken Tostadas

Chef Dave Prows from Costa Vida was in the Good Things kitchen Wednesday sharing his recipe for Raspberry Chipolte Chicken Tostadas.

Ingredients:

  • 4 Corn or flour tortilla shells
  • 1 cup Refritados
  • 1 1/3 cup grilled or roasted chicken meat
  • 1 cup romaine lettuce, thinly sliced
  • ½ cup roma tomatoes diced
  • 12 avocado slices
  • ½ cup Queso fresco
  • ¼ cup raspberry Chipotle sauce
  • 8 lime wedges

Directions:

Make your own tostada shells by placing a corn tortilla in the microwave on high until crisp, about one minute per side.
Heat the beans and place them on the shell, place the chicken on top of the beans.
Place the romaine, lettuce and Queso fresco on top of the chicken.
Drizzle the sauce over the top on the entire tostada
Garnish with the lime wedge
