Pork Osso Bucco

Recipe: Pork Osso Bucco

Ingredients:

  • 6 (14oz - 16oz) pork shanks
  • 2 TBSP olive oil
  • seasoned flour (to dust)
  • ½ cup red wine
  • 1 TBSP minced garlic
  • ½ Lb. coarse chopped carrots
  • ½ Lb. coarse chopped onions
  • ½ Lb. coarse chopped celery
  • 1 qt marinara sauce

Directions:

Heat the olive oil in a large skillet over medium heat and dust the pork shanks in the seasoned flour. Brown on all sides and place in a crock pot or slow roasting pan. Add the garlic, carrots, onions and celery to the skillet and cook over high heat for approximately 2 minutes. Add the red wine and reduce by half. Add the marinara sauce and blend well. Pour the mixture over the pork shanks and cover well. Cook for approximately 6 hours over low heat until the meat is falling off the bone. Serve with sauce over pasta.
