PESTO CHICKEN ON CIABATTA BREAD
2 Tbsp. Basil Pesto
2/3 c. mayonnaise
1 garlic clove, pressed
Ciabatta Bread
Red, Yellow & Orange peppers, sliced
Red onion, Mushrooms
Spinach leaves
Tomatoes, sliced thin
Mozzarella cheese, shredded
Chicken, cooked & seasoned
with basil, parsley, S&P
Mix the basil pesto, mayonnaise and the garlic together. Slice the ciabbatta bread the long way (but try to not cut all the way through) and lather on the pesto/mayo spread.
Saute veggies in a little olive oil till soft, but not mushy! Then layer cooked chicken meat which is either chunked or cut in long slices on the bread. Next put on veggies. Then put washed spinach leaves and tomatoes on. Layer on mozzarella cheese….(a good amount. ) Leave sandwich open and put it on a cookie sheet under the broiler. Watch it carefullly…you want the cheese to melt and the sides of the bread to get brownish, but not to get all hard from cooking too long. At that point take it out of oven and close the top piece of bread over the bottom and put back in oven till that warms up on top.
TOMATO BASIL FOCACCIA BREAD
Focaccia bread
2 c. mozzarella cheese, shredded
¼ c. fresh parmsean cheese, shredded
2 Tbsp. pesto basil
2/3 c. mayonnaise
1 garlic clove, minced
4 roma tomatoes, thinly sliced
Preheat oven to 350 degrees. Mix 1 1/2 cups mozzarella, the parmesan, pesto basil, mayonnaise and minced garlic together. layer that mixture on the bread.
Then lay the sliced tomatoes over to top evenly. top tomatoes with the rest of the mozzarella.
Cook for 15-20 minutes or until top is golden brown and bubbly. Serve warm. ...cut with a pizza cutter.
**good with pastas, salads or as an appetizer.
