Peach and Cherry Hand Pies

RECIPE:
Peach & Cherry Hand Pies
Peaches 1 lb
Cherries 1/2 lb
Red wine ½ cup
White balsamic 2 tablespoons
Sugar 3/4 cup
Cornstarch 1 tablespoon
Water 1 tablespoon
Vanilla bean 1 each
Pastry Sheets or Pre made pie dough
Combined pitted cherries, diced peaches and sugar
Heat over med high heat, stirring continuously until it comes to boil.
Add wine and cook for 2 more minutes
Turn down heat and add balsamic and vanilla bean
Cook for 5-15 mi d depending on desired texture
Combined cornstarch and water together
Whisk into cherries and continue to boil for 1 minute. Remove from heat and cool completely. Remove vanilla bean scraping out seeds
Cool filling in Fridge
Heat Oven to 375 degrees
Roll out puff pastry or piecrust dough slightly and cut w/ cutter in desired shape
Place cool filling into middle
Seal edges w/ egg wash, Brush top with egg wash, Sprinkle w/ sugar
Layer on baking sheet and bake for 12-15 mins
Serve with chocolate or vanilla ice cream. For Breakfast top with vanilla yogurt and fresh fruit
