Pan Roasted Pork Tenderloin with butter leaf and avocado salad
Butter leaf and Avocado salad
Ingredients
1 cup thinly sliced red onion
2 Tbsp. olive oil
1 Tbsp. fresh lime juice
¼ tsp. salt
¼ tsp. black pepper
3 cups butter lettuce, torn
1 cup avocado, sliced
Combine the first 5 ingredients together in a bowl
Add the avocado and butter leaf and gently toss
Pan Roasted Pork Tenderloin
½ tsp. salt
¼ tsp. black pepper
1 lb. pork tenderloin
1 Tbsp. olive oil
Season the tenderloin with the salt and pepper
Add the oil to a hot skillet and brown on all sides and cook to 145 degrees
