Ingredients Filling Dough
1lb Ground Beef
1 lb Flour
1 ea. Onion, Small Diced
1/2 oz. Dry yeast, (about 2 packs)
3 ea. Tomatoes, Small Diced
1/4 cup Oil
12 ea., Fresh Mint leaves, Chopped
 1/4 cup Sugar
2 tsp. White Pepper
10 oz. Water, Warm
1/4 cup Dry Parsley
1 tbsp. Tahini Paste
Juice from 2 Limes, seeded
Garlic and Chives are Optional
Prep Procedure For Filling
1- Combine all Filling ingredients, mix well until uniform, place mixture in large strainer
and reserve to extract extra moisture.
For Dough
1- In a mixer, set in low speed, combine all dry ingredients, for one minute.
2- Add oil and warm water, mix until dough is uniform, adjust flour and water if needed.
3- Separate dough in 1.5oz balls, yield about 35-40 ea.
4- Fill dough with filling, place in a baking sheet lined with parchment paper and bake for 20 min
at 325f* or until light brown in color.
Ps: Add two tbsp. of water to two egg yolks, mix well and brush over Esfiha edge before baking.
Yield 8 - 10 Esfihas
