2 Tbsp. Olive Oil
8 oz Andouille Sausage
1 cup chopped onion
1 red bell pepper, finely chopped
1 hot red pepper (cayenne or chipotle)
2 garlic cloves, finely minced
½ tsp. Dried Thyme
½ tsp. Dried Oregano
½ cup Tomato Sauce
½ cup Beef Broth
¼ cup Fresh Bread Crumbs
2 Eggs, 2 Lbs. Ground Beef
1 tsp. Salt, Black pepper, to taste
Heat the olive oil in a large skillet over low heat. Add the sausage, onion, bell pepper, hot pepper, garlic, thyme and oregano and mix well. Cover and cook for 15 minutes. Remove to a bowl and let cool to room temperature. Add the tomato sauce, broth and bread crumbs to the sausage mixture. Whip the eggs, and then add to the sausage mixture. Crumble the ground beef into the bowl. Add the salt and pepper. Mix gently until combined. Pack into a 5"X9" loaf pan. Bake at 350 degrees for 45 minutes, or until cooked through (internal temp of 165 degrees). Pour off the drippings from the pan. Cover the pan loosely with foil and let stand for 10 minutes. Slice and serve.
