ason Jar Picnic Spread
8 oz. bow tie pasta
3 Tbsp. olive oil
1 cup corn kernels
1 cup shelled edamame
1
½ cup shredded carrots
1/3 cup grated
medium red bell pepper diced parmesan cheeseSalt
Cook and drain pasta. In a large bowl, toss the cooled pasta with the corn, edamame, bell pepper and carrots. Drizzle with the remaining 3 tablespoons olive oil and toss to coat. Add the parmesan and salt.
Divide chilled salad evenly among four of the mason jars.
3 ears corn
2 cups blueberries
1 medium red bell pepper, diced
¼ cup olive oil
¼ cup rice vinegar
Dash of cayenne pepper
1 garlic clove, minced
Slice corn from cob. Combine corn, blueberries and red pepper in bowl. In blender or food processor combine oil, vinegar, cayenne pepper and garlic. Mix together and pour over corn mixture. Serve chilled or at room temp.
