Halloween Night Bites

Dinner bites to kick off a night of fun for your little monsters, pirates and princesses!

Freaky Fingers

Ingredients

  • 4 chicken breasts
  • Melted butter (1/2 C or more depending on size of chicken breasts)
  • Slivered almonds (amount equal to the number of "fingers")
  • Coating:
  • 1 C nuts
  • 1 C panko bread crumbs
  • 1 Tbs Italian seasoning
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  1. Combine coating ingredients in a food processor. Pour coating mixture onto a large plate. Pound chicken breasts and slice into long thing "finger" strips. Dip fingers into butter and then roll in coating. Place on a baking sheet.
  2. Take slivered almonds ("fingernail claws") and press firmly on ends of fingers.
  3. Bake at 400 degrees for 10-15 minutes, or until chicken is cooked through. Serve with a "Blood Sauce" (marinara, etc) if desired.

Batty Bites

  • Flour Tortillas (plain or colored)
  • Melted butter or oil
  • Salt
  • Salsa (fresh gives the highest nutrition levels)
  • Grilled steak or chicken slices
  • Equiptment:
  • Bat cookie cutter
  • Mini muffin pan (opt)
  1. Cut bat shapes using cookie cutter out of the tortillas. Brush with butter and sprinkle with salt. Line in bottoms of muffin cavities, weighing down with dried beans if necessary. Bake at 375 degrees for 10 minutes or until "bats" are set but not browned.
  2. Top bats with steak slices then salsa. Enjoy!

Pretty Pumpkins

  • 1 recipe cornbread batter (homemade or mix)
  • 3/4 C pumpkin puree
  • 1 tsp cinnamon, optional
  • Honey butter glaze
  • Mint sprigs, opt
  • Honey Butter Glaze
  • 1/2 C butter, melted
  • 1/2 C honey
  • 1 1/2 C powedered sugar
  • 2 Tbs milk, if needed
  • 1/2 tsp vanilla extract
  • Orange food coloring
  • Mini bundt pan

Prepare cornbread batter. Stir in pumpkin puree and cinnamon.
Pour batter into bundt cavities only until half full. Bake at 375 for 15 minutes or until a toothpick inserted comes out clean. Remove bundts and cool.
Slice bundt bottoms so that they are level.
To decorate pretty pumpkins, take honey butter glaze and spoon a small amount onto one bundt bottom. Top with another to form a pumpkin shape. Pour more glaze atop pumpkin, letting it drizzle down the sides. Garnish with a mint sprig "stem leaf" if desired.

Honey Butter Glaze

To make honey butter glaze, combine melted butter, honey, and vanilla extract in a medium sized bowl. Stir in powdered sugar then food coloring to desired color. Stir in enough milk to obtain a thin consistency.
