"Grown Up" Grilled Cheese Sandwhich

Todd Gardiner with Z'Tejas has a recipe for a "Grown Up" Grilled Cheese Sandwich.

Ingredients:
  • 2 slices Brioche Bread
  • 1 oz. Griddle Oil
  • 1 Tbsp. Parmesan Romano Blend, grated
  • 2 slices Asadero Cheese
  • 1 oz. Jack Cheese, shredded
  • 3 oz. Roast beef thinly sliced

Instructions:

1. GENEROUSLY brush or roll 1 side of each slice of bread with griddle butter.
2. On buttered side of bread, sprinkle ½ of the tablespoon of grated Italian
blend cheese on each slice of the bread.
3. Place buttered side down on griddle. Place 1 slice of asadero cheese on each slice of bread.
4. Spread ½ oz. of shredded jack cheese on each slice of bread. LEAVE
BREAD ON GRIDDLE TO COOK.

You should not have to pull bread off to melt cheese. Should be an almost crunchy edge to the bread, golden brown (NOT BURNT), and the cheese will finish
melting when you build the sandwich with the braised roast beef.

5. While bread is cooking on flattop, place au jus or a little water in 9
inch small sauté pan, add sliced beef and place over medium heat. Cook
meat until almost all liquid is cooked down and beef is hot, but juicy.
