Green Papaya Salad

Chef Ming from Thai Siam came in today to make Green Papaya Salad.

Som Tum - Green Papaya Salad

Dressing: 3 Tbsp. Lime Juice
2 Tbsp. Sugar
2 Tbsp. Fish Sauce
Salad: 7 oz. Shredded Green Papaya
1 oz. Shredded Carrot
6 Grape Tomatoes
2 oz. Long Green Bean
1 clove Garlic
1 Fresh Thai Chili (to taste)
2 Tbsp. Ground Peanut
4 Romaine Leaves

Put Thai Chili and garlic in pestle. Gently work Thai chili and garlic clove with mortar in the bottom of pestle. Add lime juice, fish sauce and sugar. Mix gently with mortar. Add green papaya, carrot, ground peanut and long bean. Cut grape tomatoes in half and add to pestle. Mix everything with a spoon and the mortar to allow flavor to work together. Serve on plate with romaine leaves on the side and a ball of sticky rice.
